Appears I can only get a Pathfinder Premium with a sunroof and Nav **IF** I take the DVD system? SO the Premium doesn’t have a Sunroof option? I’ve tried “building” it several ways. Am I wrong or is this true that to get the sunroof I have to take DVD just to get Nav?! Doesn’t seem right…

You are right. The platinum trim is the only one that offers navigation, and the premium option includes the moon roof and the head rest monitors. You can get navigation by itself, but if you want the moon roof you have to get the entertainment system. We didn't care much about the monitors but we wanted the moon roof so we went with the premium option...I'm sure our 4 month old will appreciate some day.
